Not just another package of rabbit meat! The history of Ardeng Cut Up Rabbit goes back to 1982. Blue Chip Farms,Inc. was buying rabbits from independent farmers and processing them into rabbit meat. We followed all the accepted practices. Comparing any two rabbits, one would be nice and tender and the other the same size and makeup would be almost too tough to cook tender enough to eat. Although the same in size they could not have been the same age. We tried hundreds of ways to get some kind of consistency. Another thing was other rabbit processors were using 10 to 13 week old rabbits for cut up fryers. ( meat packages 2 1/2 to 3 pound or over) Our first computer was purchased in 1983. After a short learning period we set up a data base to assemble information that could be of help to have a consistent tender cut up rabbit fryer. I talked to some of the world's finest chefs, recording their answers on the data base. I was cooking our rabbit sausage for demo's in a lot of super markets all over the east coast. I met some very wonderful people, some had a lifetime of cooking rabbits. I recorded these conversations and added them to my data base. By 1985 a definite pattern was emerging. A breed of meat rabbit that did not exist needed to be developed that could produce a rabbit fryer that would always be tender and delicious. This did not happen overnight. We had already started trying to improve the quality of our rabbit meat in 1983. By 1987 we were starting to show some marked improvement with a special cross bred rabbit. A decision was made to continue the breeding practices to develop this rabbit. It continues today for an even better meat rabbit. Todays quality is every bit 2000% better quality than when we started. By 1998 we gave this rabbit a name, Chips. Chips are harvested at 7 to 8 weeks of age and are always tender. A consistent package of rabbit meat 1 3/4 lb to 2 1/4 lb. Can be prepared by any novice cook and always be delicious to eat. Cook anyway you cook any other meats. They have a small bone structure, a lot of meat and almost no fat. The 2 pound size can be purchased 1/3 less cost than the 3 pound rabbits processed by others. A decision was made. To keep this rabbit exclusively for the customers of Ardeng Rabbit Meat. No other rabbit meat company has this rabbit. Expansion of the herd will continue. Ardeng Rabbit Meat has planned for more of our customers to be able to afford the highest quality. All Ardeng Rabbit Meat rabbits are grown in a pleasant environment. Only all natural feed of the highest quality is fed fresh daily. The past six years we were able to reduce stress and increase health of the herd as to no longer need any chemical medications. Medication is used only as a last resort to save a rabbit. Any medicated fryer is not used for meat. |
